Ingredients: (Serves 4-6)
3 ripe Hass avocados
1 small red onion, finely diced
1-2 serrano chilies, finely chopped (or jalapeños for milder heat)
1 large ripe tomato, seeds removed & diced
2 tbsp fresh cilantro, finely chopped
1 garlic clove, finely grated or mashed
Juice of 2 limes
1 tsp flaky sea salt (adjust to taste)
½ tsp ground cumin (optional)
1 tbsp extra-virgin olive oil
Zest of 1 lime
Toastedpepitas (optional)
Crumbled cotija cheese (optional)

Directions:
In a bowl, combine the red onion, chopped chilies, lime juice, and sea salt. Let it sit for 5 minutes—this mellows the onion’s sharpness and infuses the lime flavor.
Cut the avocados in half, remove the pits, and scoop the flesh into the bowl.
Using a fork or molcajete, mash the avocados to your desired consistency—chunky or smooth.
Add the garlic, ground cumin (if using), lime zest, and olive oil.
Stir in the tomatoes and cilantro, folding gently to keep the texture intact.
Taste and adjust with more salt or lime juice as needed.
For added texture and flavor, sprinkle toasted pepitas on top and crumble over a bit of cotija cheese.
Serve immediately with warm tortilla chips, vegetable crudités, or as a topping for tacos.
