Ingredients:
1 head Romaine lettuce (chopped)
1 tomato (diced)
½ red onion
1 small jalapeño or green chili (finely chopped)
¼ cup fresh cilantro (chopped)
1 small cucumber (diced)
3 tbsp olive oil
2 tbsp fresh lemon juice
1 tbsp white vinegar (or apple cider vinegar)
½ tsp salt (or to taste)

Instructions:
In a large bowl, combine the chopped Romaine lettuce, tomato, red onion, green chili, cucumber, and cilantro.
In a small bowl, whisk together the olive oil, lemon juice, vinegar, and salt.
Pour the dressing over the salad and toss well to coat all the ingredients.
Let the salad sit for 5–10 minutes to absorb the flavors.
Serve alongside Injera, bread, or even enjoy on its own.
